Apple-Plum Pie

This morning I made an apple-plum pie that is simply delicious!
Over the summer I picked, peeled, sliced and froze some apples from our apple tree in the backyard hoping I would be able to bake something with them this fall. I can not tell you how neat it is to be able to cook and bake things with ingredients from our own yard!

I started with a simple pie filling from Paula Deen. She's my go-to gal for anything ending in "pie". I could do an entire page of blogs devoted to some of the yum things I've made with her guidance!
Out of the corner of my eye I noticed that we had a couple of plums in the fruit bowl & thought they might make a nice addition to the pie. I sliced them up and added them in along with about 1/4 cup more flour to thicken the mix up a tad & some of a cinnamon sugar mix I have just because :)

I'm not sure why, but I've never done a latice top before, so I did one. I had one frozen pie crust from a few months ago and one pillsbury crust back in the fridge so it worked out perfectly. And pretty darn easy if I do say so!

 It is a bit more brown that I like on the top, but so delicious!
A tip: During the last 15-20min of baking, place some aluminum foil over the pie to prevent over-browning. I completely spaced this tip today while playing Scarlett.

Thanksgiving is one week from today! This will be my first one in 5 years that I have cooked absolutely nothing for. I think I'm actually going to enjoy the break, maybe. Happy Holidays everyone!!
